For the first time, I’m able to harvest a few spears of asparagus from the bed I planted a few years ago. Instead of cooking them (there’s not really enough to feed our family a vegetable side), I’m cutting them up and adding them (and some violet leaves) raw to a salad. Have you ever had Super fresh raw asparagus? It’s amazing! Especially after a two-year wait..
I’m breading chicken breasts, and mashing potatoes. Once they’re all mashed up, I’m adding fresh-cut chives. Seasonal eating at it’s finest! One day, I’ll be eating my own potatoes as well. (Probably won’t ever be eating my own chickens.. unless my husband decides HE wants to deal with them.. I mean take care of them..)
So satisfying!
